ARTICHOKE

The artichoke is a vegetable belonging to the Asteraceae family, which is characterised by its flowers made up of hundreds or even thousands of tiny flowers. The family includes vegetables of various species: leaf (chicory, lettuce, endive, escarole), flower (artichoke) or stem (thistle). A common feature of many of these plants is that their tissues contain abundant latex.
