RED CABBAGE
Common name lombard, red cabbage, purple cabbage, is a plant of the cabbage family (and both cabbages). It is a group of cultivars (Ruby Ball, Kalibos…) of the cabbage variety Brassica oleracea var. in which the leaves have a characteristic purplish colour. This colour is due to the presence of a pigment called anthocyanin. Red cabbage is often used as an indicator of natural pH, to identify acids or bases
